This raw honey comes from the Messina region and is collected in mid-mountain areas during June and July. It has a variety of colors, ranging from amber to near black, depending on where it is produced. It usually does not crystallize and has a powerful, earthy smell with a robust, mineral-infused taste. It complements non-mature and medium-mature cheeses.
