Biancolilla olives have a distinctive spicy and fruity flavor. This native cultivar from Sicily produces an extra virgin olive oil with low acidity and excellent productivity and product conservation. The cold extraction process preserves all antioxidants and nutrients without using heat or bleaching. Unfiltered olive oil also retains antioxidants and naturally decants. Hand-picked green olives undergo a labor-intensive process to ensure their quality. Laboratory testing shows a high polyphenol content of 636 mg/Kg, higher than the typical range of 220-350 mg/Kg found in most EVOOs.
