The wheat is milled into semolina at certified organic mills and each batch is thoroughly tested to ensure it is completely free of mycotoxins. Our skilled artisans use a slow, low temperature drying process for over 48 hours, resulting in a highly digestible and delicate pasta with a satisfying "bite".
