Basic Fresh Pasta Dough

Fresh pasta at home? Yes, it’s easier than you think — especially when you start with the right flour. In Italy, pasta making is an art of simplicity: just flour, eggs (or water), and your hands.

We’re sharing two classic pasta dough recipes to get you started:
one with eggs for rich, silky ribbons like tagliatelle, and one with just water for firm, eggless pasta like orecchiette or cavatelli.

Recipe 1: Fresh Egg Pasta

For silky, golden pasta like tagliatelle, pappardelle, lasagna sheets, or ravioli.

Ingredients (Serves 2–3)

  • 200g Molino Pasini 00 Pasta Flour
  • 2 large eggs
  • 1 tsp olive oil (optional)
  • A pinch of salt

Ratio Tip: Use 1 egg per 100g flour. Easy to scale!

Method

  • Pour flour onto a clean surface, forming a well in the center.
  • Crack eggs into the well. Add oil and salt if using.
  • Using a fork, gently whisk the eggs, slowly incorporating flour from the sides.
  • Once it thickens, use your hands to knead into a smooth, elastic dough (8–10 mins).
  • Wrap and rest at room temp for 30 mins.
  • Roll out with a pasta machine or rolling pin, and shape as desired.

Recipe 2: Eggless Pasta (Vegan Friendly)

For firmer pasta like orecchiette, cavatelli, or trofie.

Ingredients (Serves 2–3)

  • 200g Molino Pasini Durum Semola
  • ~90–100ml warm water
  • A pinch of salt

Method

  • Place flour on your work surface, forming a well.
  • Add warm water gradually, mixing into the flour.
  • Knead until the dough is firm but smooth (about 10 mins).
  • Wrap and rest for 30–60 mins.
  • Shape by hand or with a pasta press.

Durum Semola is coarse milled durum wheat semolina — it gives great bite and structure to eggless pasta.
