
Trendy Tuna Sandwich

Ingredients:
- 200ml seed oil
- 100ml whole milk
- A spoonful of colatura sauce
- 150g of datterini tomatoes
- 120g red tuna
- Half a red onion
- mixed salad
- Extra virgin olive oil
Preparation
Let's start with the quick and eggless mayonnaise: take the milk and oil, combine them and with an immersion blender emulsify well until you obtain a compact consistency. Add a spoonful of colatura and emulsify again. Set aside and put in the fridge.
For the pickled onions: chop them finely, put them in very cold water and for 10 minutes. Repeat this process three times.
Once the three processes are complete, put the onions to marinate in three tablespoons of raspberry vinegar.
For the tomatoes: cut the datterini in half, sprinkle them with extra virgin olive oil, add basil, thyme, garlic, pepper, oregano and salt. Season the tomatoes well and place them on a baking tray lined with baking paper. Place in a fan oven at 160 degrees for 30/40 minutes.
Make the sandwich by spreading a spoonful of Armatore colatura mayonnaise, mixed salad, semi-dried cherry tomatoes, onions and Armatore red tuna belly.
