It features a hard, compact paste with hues ranging from bright white to straw yellow. Perfect for traditional Italian first courses, ideal grated over carbonara, amatriciana, and cacio e pepe. Produced in strict compliance with the Pecorino Romano DOP specifications, it ensures consumers enjoy a true product of Italian excellence.

Characteristics
Well-structured cylindrical shape, coated in black with specific protective agents.
Hard, compact paste with a colour ranging from bright white to straw yellow.
Aromatic and slightly spicy flavour, more or less intense depending on the ageing period. Produced in strict compliance with the Pecorino Romano DOP production specification, ensuring consumers enjoy an excellent product of true Italian excellence.
Each wheel of Pecorino Romano is branded at the origin along the entire rind using a specific marking matrix.

In the kitchen
A classic table cheese, perfect paired with acacia honey or fruit compotes at the end of a meal. Wonderful grated over pasta to give your dish that extra special touch.

A cheese with over a thousand years of history

Pecorino Romano, made from pure sheep’s milk, is one of the world’s most ancient cheeses. Despite what many believe, its name does not come from the city of Rome, but from its historic role: it was a staple food for the Roman legions, an essential source of nourishment. Each legionary received rations of bread and spelt soup, always accompanied by Pecorino, the original “energy bar of the Roman army."

Tradition that hasn’t changed

Today, this Pecorino is still produced following methods nearly identical to those used in antiquity, resulting in a cheese with a distinctive, aromatic, slightly spicy flavor — intense yet beautifully balanced.

  • After 5 months of aging: perfect as part of a meal, paired with fresh vegetables, honey, or fruit.
  • After 8 months: excellent grated cheese, ideal for flavoring iconic Roman dishes such as bucatini all’amatriciana, spaghetti cacio e pepe, and trippa alla romana.

We recommend storing it in a cool, dry place, wrapped in its original packaging.
