BalsaMela is made according to Acetaia San Giacomo original recipe. The inspiration is that of the Apple Balsamic Vinegar made in the hills of Modena and Reggio Emilia where it has always been done in case there were not enough grapes (there are associations of producers who still do it).
The difference with other balsamic vinegars lies in the cooking of a juice which in this case is NOT grape juice but organic apple juice .
Let's get this straight right away: this is NOT a product "flavoured with... " but made 100% with organic apple juice that is cooked and then acetified in "neutral" containers to retain as much of the apple's aroma (precisely "cooked") as possible, which takes us back to when our grandmother made baked apples at home.
It's sweet and sour.
The very delicate acidity deriving from the apple has the characteristic of being less invasive and aggressive than that deriving from the grape.
Our most versatile product by far, for this reason it is well suited to seasoning meats (nice, fatty and tasty ones like pork but also "white") as well as fresh goat cheese or even simple vegetables, cooked or raw. Absolutely perfect on vanilla ice cream or custard, with an apple dessert like strudel or tarte tatin, as an ingredient in cocktails or BBQ sauces or in a fruit salad.
We tried it 1000 times, it amazed us 1000 times.
