Bonfiore is a flowery rind cheese made from pasteurized whole buffalo milk. The whole character of this cheese emerges on the nose and mouth, striking with an important fresh lactic note with a finish of cooked butter, a note of fresh white mushrooms and a slight but pleasant ammonia note. In the Barlotti dairy only their milk and that of trusted farms controlled by them are used, processed within 12 hours of milking.
