Pizza alla Pala vs. Pizza in Teglia — What’s the Difference?

  • Pizza alla Pala is long, oval-shaped, very light, and airy, traditionally baked directly on the stone or on a pizza peel (pala). It has a crisp exterior and an incredibly soft, open crumb, ideal as a sandwich bread with follings in between.
  • Pizza in Teglia is baked in a tray (teglia), resulting in a thicker, softer, more focaccia-like base with a deep, even structure. It holds toppings such as mozzarella and tomato sauce very well and is perfect for slice-style pizza.
  • We recommend Pizza Teglia for traditional toppings and Pizza Pala for sandwich-style creations.

Both are artisanal, but each offers a distinct texture and style depending on your menu or preference.

How to Use:

  1. Open the pack and remove the bases.
  2. Preheat your oven to 200–220°C (fan or static).
  3. Warm the base for 5–7 minutes until lightly crisp and fragrant.
  4. Add your favourite toppings.
  5. For a crispier finish, return to the oven for 2–3 minutes after topping.

Balance the wet ingredients to keep your pizza perfectly crisp,  go easy on the tomato sauce!
For a crispy outside and soft inside, be patient: your pizza needs to brown properly.
Bake it directly on the oven rack for the best texture.

Ingredients: ‘00’ soft wheat flour, water, natural mother yeast (type “00” soft wheat flour, water), extra virgin olive oil, salt, brewer’s yeast, remilled durum wheat semolina.

Store in a cool, dry place away from heat sources.
After opening, refrigerate in a tightly sealed package and consume within 3 days.
