Pizza alla Pala vs. Pizza in Teglia — What’s the Difference?
- Pizza alla Pala is long, oval-shaped, very light, and airy, traditionally baked directly on the stone or on a pizza peel (pala). It has a crisp exterior and an incredibly soft, open crumb, ideal as a sandwich bread with follings in between.
- Pizza in Teglia is baked in a tray (teglia), resulting in a thicker, softer, more focaccia-like base with a deep, even structure. It holds toppings such as mozzarella and tomato sauce very well and is perfect for slice-style pizza.
- We recommend Pizza Teglia for traditional toppings and Pizza Pala for sandwich-style creations.
Both are artisanal, but each offers a distinct texture and style depending on your menu or preference.
How to Use:
- Open the pack and remove the bases.
- Preheat your oven to 200–220°C (fan or static).
- Warm the base for 5–7 minutes until lightly crisp and fragrant.
- Add your favourite toppings.
- For a crispier finish, return to the oven for 2–3 minutes after topping.
Balance the wet ingredients to keep your pizza perfectly crisp, go easy on the tomato sauce!
• For a crispy outside and soft inside, be patient: your pizza needs to brown properly.
• Bake it directly on the oven rack for the best texture.
