Green olives are harvested in autumn, cured to remove their natural bitterness, and stored in brine. Once desalinated, they are pitted and filled with a savory mix of beef, pork, and other meats, then lightly spiced. Every family has its own secret recipe, reflecting the creativity and craftsmanship of Italian artisans.

Since the 1950s, the Migliori family has preserved this tradition. Zè Migliori personally sources the legendary Olive Ascolane, now DOP-protected, and combines them with olives from the family grove. Today, Zè, his wife Marinella, their son Augusto, and their dedicated team continue this artisanal legacy, bringing the authentic taste of Ascoli to your table.
