Discover Vacche Rosse, a next-level Parmigiano Reggiano crafted from the heritage “red cow” milk that inspired Benedictine monks over 800 years ago. Aged 24 months by third-generation cheesemaker Luciano Catellani, this cheese is rich, aromatic, and full of history.

Sweet and mild, Vacche Rosse is perfect on its own, paired with Traditional Balsamic Vinegar of Modena, or grated over risotto, pasta, soups, roasted vegetables, and salads. Its unique flavor notes include walnuts, hazelnuts, wildflowers, fresh-baked bread, and a delicate fruity acidity with balanced spice.

This is not Parmigiano Reggiano DOP, even if it is produced in practically the same way, if not with more restrictions.

Very evolved , with floral aromas, fresh grass, sometimes some hints of tropical fruit or citrus. Butter, cooked milk and dried fruit alternate consistently. Extremely persistent in aroma and taste, I recommend consuming it after half an hour out of the refrigerator and try it for yourself.

In our opinion, this product is the one that best expresses the typical characteristics of the rich milk of the Rossa Reggiana and which differentiate it from its cousin Parmigiano Reggiano made with the milk of the more common Dutch Friesian cows (the classic black and white cow).
