Originally called crescenta or crescentina, the name “tigella” comes from its unique method of cooking. Traditionally, the dough was placed between small terracotta discs, which were stacked into columns and baked in a wood-fired oven. This artisanal technique gives tigelle their signature shape, texture, and authentic Italian flavor.
